Behold: A Matcha Sugar Cookie Recipe

I know it’s been a whiiiiiiiiiile since I blogged, but ya girl was uninspired! Luckily the longer daylight hours, warmer temps and spring on the horizon have given me a lil motivation!
I thought it’d be fitting to share a matcha sugar cookie recipe because of its light, earthy flavor (things are in bloom!) and pale green hue reflect the season. Plus, St. Patty’s Day and Easter are coming up. Whoop! let’s get into it:
Matcha Sugar Cookies
yield: about 20 cookies
1 cup + 2 T flour
1/4 t baking soda
1/8 t baking powder
1/2 t salt
2 T matcha powder
1 cup pure cane sugar
1/2 cup (I stick) softened butter
1 egg
2 t pure vanilla extract
for rollin:
1 T granulated sugar
and/or
1 T green sanding sugar
Preheat oven to 350°F. In a small bowl, whisk the tablespoons of cane sugar and sanding sugar together. Set aside.
In a medium bowl, whisk flour, soda, baking powder, matcha powder and salt. Set aside. In a separate medium sized bowl or stand mixer, cream the sugar and butter until smooth. Add the egg and vanilla and beat until there are no lumps. Add flour mixture and stir just until incorporated. Refrigerate batter for 10min+ until firm.
Roll or scoop dough into balls about 1 1/2 tablespoons in size. Roll through the sugar mixture and place on parchment covered baking sheets.
Bake for 7-11 minutes, the edges are just golden. Allow to cool on a the baking sheet for a few minutes before transferring to a wire rack or your mouth.
As you can see, these are too simple to pass up baking them for yourself (or just order them from us right here, boo)!
Some sweet variations would be to omit the matcha powder completely for a classic sugar cookie flavor, or add your favorite extracts⏤like almond or butter⏤in place of vanilla. Lemme know if you try it and use #twodoughgirls on instagram so we can see your results!
